The chef’s skills exam took place on Wednesday 7th June. The exam consisted of a 3 hour exam divided into a mise en place section for 30 minutes (getting prepared) and then a 2 ½ hour main cooking section. Four students sat the exam.
The preparation period for the exam is one month and in this time the brief is given, menus selected, cooking trials carried out etc. The four students cooked extremely well and met the brief of a two course main meal with accompaniments for four people. The meal had to also be based around seasonal produce and British ingredients where possible. Below are photographs documenting their dishes.
